Zucchini Delight in 10 Minutes!
Ingredients:
- 2 medium zucchinis, chopped into small cubes (about 2 cups)
- 1 medium red onion, thinly sliced into half rings (about 1 cup)
- 1 large carrot, peeled and grated into thin strips (about 1 cup)
- 1 red bell pepper, sliced into thin strips (about 1 cup)
- 1 yellow bell pepper, sliced into thin strips (about 1 cup)
- 3 cloves of garlic, finely chopped
- Salt, to taste
- Paprika, to taste
Directions:
- Heat a large skillet over medium heat. Add a splash of oil and sauté the red onion until translucent, about 2-3 minutes.
- Add the zucchini, carrots, red bell pepper, yellow bell pepper, and garlic to the skillet. Stir well to combine all the ingredients.
- Cook the vegetables for about 5-6 minutes, stirring occasionally, until they are tender but still have a slight crunch.
- Season with salt and paprika, adjusting the amounts to suit your taste.
- Remove from heat and serve hot as a delicious and healthy alternative to pizza!
Tips:
- Feel free to add other vegetables like mushrooms, cherry tomatoes, or spinach for extra flavor and nutrients.
- You can sprinkle some grated cheese on top before serving for a cheesy finish.
