ZUCCHINI CAKE

Ingredients:

2 cups sugar
2 eggs
1 cups vegetable oil
2 1/2 cups flour
1 tsp. soda
1 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
2 cups shredded zucchini
3/4 cup shredded coconut
1/2 cup chopped nuts
1 cup milk chocolate chips

Directions:

1 – Combine sugar, eggs, and oil in mixing bowl and beat. Sift flour, salt, soda, baking powder, and cinnamon together. Add alternately with shredded zucchini. Add coconut and chopped nuts.
2 – Put in greased 9×13″ pan and sprinkle with 1 cup chocolate chips.
3 – Bake at 350°F for 45 minutes. Frost with:
Cream Cheese Frosting:
4 oz. cream cheese
6 tablespoons butter
2 tablespoons milk
1 teaspoon vanilla
3 cups powdered sugar
Beat together and spread over cake when cooled.
