Zucchini and ricotta fritters: the easy and tasty recipe
Ingredients:
2 medium-sized zucchini
Salt and pepper
50 g ricotta cheese (or cream cheese)
fresh parsley
40g grated cheese
1 medium-sized egg
Olive oil
Breadcrumbs
150g Greek yogurt
Half a lemon juice
1 clove of garlic
extra virgin olive oil
Directions:
Grate the courgettes and squeeze them to remove excess water.
Place them in a bowl and add salt, pepper, grated cheese, ricotta, parsley, egg and oil.
Shape the donuts and coat them with breadcrumbs.
Heat some olive oil and cook the donuts.
Prepare a yogurt sauce to serve with your donuts.
