Yoghurt Cake Recipe
Ingredients:
- 1 cup plain yogurt (245 grams)
- 1 cup sugar (200 grams)
- 1/2 cup vegetable oil (120 milliliters)
- 3 eggs(about 150 grams)
- 1 teaspoon vanilla extract(5 milliliters)
- 1 and 1/2 cups all-purpose flour (180 grams)
- **2 teaspoons baking powder (8 grams)
- 1/2 teaspoon baking soda (2 grams)
- A pinch of salt (about 1 gram)
- Zest of 1 lemon (optional)
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour a loaf cake pan.
- In a large bowl, mix the yogurt, sugar, and vegetable oil until well combined.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing untill just combined. If using, fold in the lemon zest.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
