WHITE CHOCOLATE COCONUT COOKIES (NO BAKE)
INGREDIENTS
COOKIE DOUGH
100 g Maria biscuits (or biscuits of your choice)
125 g grated coconut
400 g condensed milk

200 g white chocolate
STEPS
Place the Maria biscuits in a food processor and grind them coarsely.
In a deep bowl, combine the ground Maria biscuits, grated coconut, and condensed milk. Mix until smooth
Divide the cookie dough into 4 equal portions (150g each).
Take a portion of the cookie dough and knead it together. Place it on your workspace and roll it out into a 33 cm-long (1 feet) elongated rod.
Sprinkle some grated coconut on a sheet of parchment paper and place the coconut rod on it. Roll thoroughly in the grated coconut. Transfer the coconut rod onto another sheet of parchment paper and repeat this process.
Using a chopstick (or any other suitable object), create a deep indentation in the center of the rod, from one end to the other.
Melt the white chocolate using a double boiler.
Fill the coconut rods with the melted white chocolate. Allow the chocolate to harden.
Once the chocolate has solidified, slice the coconut log into desired pieces. You can cut them slightly diagonally for an appealing look.
Tips:
Substitute white chocolate with chocolate of your choice.
Use a warm, sharp knife when cutting the coconut cookies.
