Ingredients:
- 1 leek, sliced
- 3 carrots, peeled and chopped
- 4 potatoes, peeled and diced
- 1 red paprika, sliced
- 4 eggs
- 50g/1.76oz spinach
- Green onions, chopped
- Dill and parsley, chopped
- Salt to taste
- 4 tbsp olive oil
- 4 tbsp flour
- 1 tsp baking powder
Directions:
- Preheat the oven to 375°F (190°C) and grease a baking dish.
- In a large bowl, mix together the leek, carrots, potatoes, red paprika, spinach, green onions, dill, and parsley.
- In a separate bowl, beat the eggs and then add them to the vegetable mixture.
- Stir in the salt, olive oil, flour, and baking powder until well combined.
- Pour the mixture into the greased baking dish and spread it out evenly.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the vegetables are cooked through.
- Serve hot and enjoy!
