Ingredients
For the Dough:
- 1 egg
- Zest of 1 lemon
- 125 grams (1/2 cup) of sugar
- 310 grams (2 1/2 cups) of flour
- 5 grams (1 teaspoon) of baking powder
- 140 grams (5 oz) of butter, softened
Directions:
- Preheat the oven to 180°C (350°F) and grease a cake pan.
- In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Add in the egg and lemon zest, mixing well.
- Gradually add in the flour and baking powder, mixing until a dough forms.
- Press the dough into the prepared cake pan, smoothing out the top.
- Bake in the preheated oven for about 25-30 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
- Allow the cake to cool before slicing and serving.
Tips:
- For an extra burst of citrus flavor, you can add a splash of lemon juice to the dough.
- This cake is perfect for serving with a dollop of whipped cream or a scoop of vanilla ice cream.
