Tasty Baked Cod in Coconut Lemon Cream Sauce
Ingredients:
- 4 cod fillets
- 1/2 cup of coconut milk
- 1/4 cup of heavy cream
- Juice of 1 lemon
- 2 cloves of garlic, minced
- 1 teaspoon of paprika
- 1/2 teaspoon of cayenne pepper
- Salt and pepper to taste
- Fresh parsley, chopped
Directions:
- Preheat your oven to 375°F (190°C) and grease a baking dish.
- In a mixing bowl, combine the coconut milk, heavy cream, lemon juice, minced garlic, paprika, cayenne pepper, salt, and pepper.
- Place the cod fillets in the greased baking dish and pour the coconut lemon cream sauce over them.
- Bake in the preheated oven for 20-25 minutes, or until the cod is cooked through and flakes easily with a fork.
- Garnish with chopped parsley before serving.
Tips:
- Make sure to not overcook the cod, as it can become dry.
- Feel free to adjust the amount of cayenne pepper to suit your spice preference.
- Serve the baked cod with a side of rice or steamed vegetables for a complete meal.
