Tasty Baked Cod in Coconut Lemon Cream Sauce

Ingredients:

  • 4 cod fillets
  • 1/2 cup of coconut milk
  • 1/4 cup of heavy cream
  • Juice of 1 lemon
  • 2 cloves of garlic, minced
  • 1 teaspoon of paprika
  • 1/2 teaspoon of cayenne pepper
  • Salt and pepper to taste
  • Fresh parsley, chopped

Directions:

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a mixing bowl, combine the coconut milk, heavy cream, lemon juice, minced garlic, paprika, cayenne pepper, salt, and pepper.
  3. Place the cod fillets in the greased baking dish and pour the coconut lemon cream sauce over them.
  4. Bake in the preheated oven for 20-25 minutes, or until the cod is cooked through and flakes easily with a fork.
  5. Garnish with chopped parsley before serving.
    Tips:
  • Make sure to not overcook the cod, as it can become dry.
  • Feel free to adjust the amount of cayenne pepper to suit your spice preference.
  • Serve the baked cod with a side of rice or steamed vegetables for a complete meal.
