TACO PASTA SALAD

TACO PASTA SALAD

This delicious summertime salad is loaded with seasoned meat, taco toppings and cheese. Serve this easy side dish with your favorite BBQ recipes.

INGREDIENTS :

6 cups rotini pasta cooked
1 lb ground beef
1 tsp garlic powder
1 cup salsa divided
¼ cup extra virgin olive oil divided
½ tbsp cumin
1 tsp chili powder
1 tsp oregano
1 cup cherry tomatoes cut in half
1 red pepper diced
3 green onions sliced
1 ½ cups cheddar cheese shredded
½ cup cilantro chopped
Salt and pepper to taste

INSTRUCTIONS:

1.In a medium skillet over medium-high heat, add 1 tablespoon of extra virgin olive oil. Once the skillet is hot, add ground beef, garlic powder and 3 tablespoons of salsa. Cook until the meat is browned (about 8 to 10 minutes).

2.Place the beef in a bowl and let it cool.

3.Add the cooked pasta to a large salad bowl. Add the beef mixture, tomatoes, red pepper, green onion, cilantro and cheddar cheese. Mix to combine.

4.Add the rest of the olive oil, salsa, cumin, chili powder, oregano, salt and pepper. Stir until everything is combined. Chill in the fridge until ready to serve. Serve cold.
