Super Soft Egg & Milk Vanilla Pancakes

Super Soft Egg & Milk Vanilla Pancakes

Ingredients:

  • 2 cups of all-purpose flour
  • 2 eggs
  • 1½ cups of milk
  • 2 tablespoons of sugar
  • 1 tablespoon of butter, melted
  • 1 teaspoon of baking powder
  • 1 teaspoon of vanilla extract
  • ¼ teaspoon of salt

Directions:

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, beat the eggs and then mix in the milk, melted butter, and vanilla extract.
  3. Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to overmix, as this can lead to tough pancakes.
  4. Heat a non-stick pan or griddle over medium heat and lightly grease it with butter or cooking spray.
  5. Pour ¼ cup of batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook for another minute or until golden brown.
  6. Repeat with the remaining batter, adding more butter or cooking spray to the pan between batches.
  7. Serve the pancakes warm with your favorite toppings, such as maple syrup, fresh fruit, or whipped cream.
    Tips:
  • For extra fluffy pancakes, let the batter rest for 5-10 minutes before cooking.
  • If you prefer thinner pancakes, simply add more milk to the batter until you reach your desired consistency.
  • Feel free to customize these pancakes with mix-ins like chocolate chips, blueberries, or sprinkles.
