Super Soft Egg & Milk Vanilla Pancakes
Ingredients:
- 2 cups of all-purpose flour
- 2 eggs
- 1½ cups of milk
- 2 tablespoons of sugar
- 1 tablespoon of butter, melted
- 1 teaspoon of baking powder
- 1 teaspoon of vanilla extract
- ¼ teaspoon of salt
Directions:
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, beat the eggs and then mix in the milk, melted butter, and vanilla extract.
- Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to overmix, as this can lead to tough pancakes.
- Heat a non-stick pan or griddle over medium heat and lightly grease it with butter or cooking spray.
- Pour ¼ cup of batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook for another minute or until golden brown.
- Repeat with the remaining batter, adding more butter or cooking spray to the pan between batches.
- Serve the pancakes warm with your favorite toppings, such as maple syrup, fresh fruit, or whipped cream.
