Salmon blanquette is a classic among fish dishes. Here is a recipe for a successful one for sure. One of the most famous dishes! Rich and creamy just the way we like it.
Ingredients :
4 salmon steaks
60g butter
3 carrots
30 cl of vegetable broth
2 white leeks, thinly sliced
40 cl fresh cream
1 shallot
The juice of a lemon
1 tbsp parsley
1 tablespoon of flour
2 tablespoons of mustard
Pinch of salt and pepper to taste
Preparation :
Start preparing the succulent salmon blanquette by dicing the salmon steaks.
Cut the clean and peeled carrots into thin slices.
Boil the carrot slices for about twenty minutes.
Slice the white leeks and bring them to a boil for 5 minutes.
Pan-fry the shallot, the thinly sliced leek whites, the diced salmon and the sliced carrots with a third of the butter, until the mixture is golden brown.
Melt the rest of the butter in a pan, then add the flour.
Add broth and stir.
Add the fresh cream and mustard.
Stir again. Add pinches of salt and pepper to taste, then the parsley.
Add the crème fraîche and mustard mixture to the salmon.
Pour the lemon juice.
