INGREDIENTS :
bed of greens (I used arugula and butter lettuce)
1/2 grapefruit, sliced
1/2 mandarin orange, sliced
1/4 avocado, sliced
handful of cherry tomatoes, halved
1/2 cucumber, shredded
1/2 golden beet, shredded
kalamata olives, halved
toasted pine nuts
vegan feta
thinly sliced red onion
Lemon Vinaigrette:
1 lemon, zested and juiced
1/4 C ACV
1 tsp agave or maple syrup
1 TBSP EVOO
INSTRUCTIONS :
- Combine all dressing ingredients in a mason jar. Shake vigorously to mix.
- Place bed of lettuce in a bowl. Top with all remaining ingredients. Toss with dressing and serve immediately!
