Ingredients

  • 2 large eggs
  • 100 grams (1/2 cup) of granulated sugar
  • 80 ml (1/3 cup) of sunflower oil
  • Zest of 1 fresh lemon

Directions

  1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat the eggs and sugar together until light and fluffy.
  3. Gradually pour in the sunflower oil while continuing to mix.
  4. Add in the lemon zest and mix until well combined.
  5. Slowly add in the flour and mix until a soft dough forms.
  6. Using a cookie scoop or spoon, drop dollops of the dough onto the prepared baking sheet.
  7. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  8. Remove from the oven and let the biscuits cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
