Soft Lemon Biscuits that melt in your mouth
Ingredients
- 2 large eggs
- 100 grams (1/2 cup) of granulated sugar
- 80 ml (1/3 cup) of sunflower oil
- Zest of 1 fresh lemon
Directions
- Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
- In a mixing bowl, beat the eggs and sugar together until light and fluffy.
- Gradually pour in the sunflower oil while continuing to mix.
- Add in the lemon zest and mix until well combined.
- Slowly add in the flour and mix until a soft dough forms.
- Using a cookie scoop or spoon, drop dollops of the dough onto the prepared baking sheet.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Remove from the oven and let the biscuits cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
