Soft and Moist Banana Bread Recipe Without a Mixer
Ingredients
3 overripe bananas, mashed
2 large eggs, at room temperature
1/2 cup vegetable oil or melted butter
3/4 cup brown sugar
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon (optional)
1/2 cup chopped nuts or chocolate chips (optional)
Step by Step Instructions
1: Preheat and Prepare
Preheat your oven to 350°F (175°C).
Grease a 9×5-inch loaf pan with butter or oil, or line with parchment paper.
2: Mix the Wet Ingredients
In a large bowl, mash the bananas until smooth.
Add the eggs, vegetable oil or melted butter, brown sugar, and vanilla extract. Mix well with a spoon or spatula.
3: Add Dry Ingredients
Sprinkle in the flour, baking soda, salt, and cinnamon if using.
Gently stir until just combined. Do not overmix.
