Sardine Muffins Recipe

Sardine Muffins

Ingredients for 18 small muffins :

150 g flour
4 teaspoons of yeast (1 sachet of yeast)
2 eggs
8 cl of olive oil
10 cl of milk
2 cans of sardines
2 green onions
100 g grated cheese (Gruyere, Emmental…)
salt and pepper

Preparation of the recipe :

1- Butter and flour your mold if it is not silicone. Preheat the oven to 180°C.
2- Drain the sardines well, then crumble them. Wash and chop the green onion.
3- In a bowl, mix the yeast with the flour, then dig a well in the middle.
4- Mix the egg, milk and oil. Add this mixture gradually to the flour mixture, while mixing with a whisk.
5- Add the sardines, the chopped green onion and the cheese. Add salt and pepper and mix.
6- Bake in a hot oven for about 20-25 minutes.
