Rich Banana Bread

Ingredients:

  • 1/2 cup of unsalted butter, melted
  • 1 cup of granulated sugar
  • 1 teaspoon of vanilla extract
  • 2 large ripe bananas, mashed
  • 2 eggs, beaten
  • 1 1/2 cups of all-purpose flour
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1/2 cup of plain Greek yogurt
  • Optional mix-ins: chocolate chips, chopped nuts, or dried fruit

Directions:

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large mixing bowl, combine the melted butter and sugar. Stir in the vanilla extract, mashed bananas, and beaten eggs.
  3. Gently fold in the flour, baking soda, and salt until just combined. Be careful not to overmix.
  4. Stir in the Greek yogurt until the batter is smooth. If desired, fold in any optional mix-ins at this point.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the banana bread to cool in the pan for 10 minutes before removing it to a wire rack to cool completely.
  8. Slice and enjoy with a spread of butter or a drizzle of honey!
    Tips:
  • For extra moist banana bread, use overripe bananas with lots of brown spots.
  • Make sure not to overmix the batter, as this can result in a tough bread.
  • Store leftover banana bread in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
