Quick and Easy Breakfast Hash
Ingredients:
- 3 large eggs
- Salt and black pepper to taste
- 1 tablespoon of sour cream
- Handful of chives, finely chopped
- Beef sausage or other fatty sausage, sliced
- 1 large potato, peeled and grated
- Oil for greasing
Directions:
- In a bowl, whisk together the eggs, salt, black pepper, and sour cream until well combined. Stir in the chopped chives.
- Heat a skillet over medium heat and cook the sliced beef sausage until browned and crispy. Remove from the skillet and set aside.
- In the same skillet, add a bit of oil if needed and add the grated potato. Cook for about 5-7 minutes, stirring occasionally, until the potatoes are crispy.
- Pour the egg mixture over the crispy potatoes and cook until the eggs are set, about 3-4 minutes.
- Serve the breakfast hash topped with the cooked beef sausage.
Tips:
- Feel free to customize this breakfast hash with your favorite veggies or meats!
- For a vegetarian version, simply omit the sausage and add more veggies like bell peppers and mushrooms.
- Don’t overcrowd the skillet when cooking the potatoes to ensure they get crispy.
