- 1 egg, beaten

Directions:
- In a large bowl, combine the sliced potatoes, onion, carrot, garlic, cheese, and spring onions.
- Add the beaten egg, salt, and flour to the mixture and stir until well combined.
- Heat sunflower oil in a skillet over medium heat.
- Take a spoonful of the potato mixture and carefully place it in the skillet, flattening it with the back of the spoon.
- Fry until golden brown on both sides, flipping halfway through cooking.
- Remove from the skillet and place on a paper towel-lined plate to drain any excess oil.
- Repeat with the remaining mixture, adding more oil to the skillet as needed.
- Serve the crispy potatoes with onions hot, and enjoy!
