Pina Colada Quick Bread
Ingredients:
- 1 3/4 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsweetened coconut flakes
- 1/2 cup crushed pineapple, drained
- 1/2 cup coconut milk
- 1/4 cup melted butter
- 1 large egg
- 1 teaspoon vanilla extract
Directions:
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large mixing bowl, combine the flour, sugar, baking powder, salt, and coconut flakes.
- In a separate bowl, mix together the crushed pineapple, coconut milk, melted butter, egg, and vanilla extract.
- Gently fold the wet ingredients into the dry ingredients until just combined. Be careful not to overmix.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

- Make sure to drain the crushed pineapple well to avoid excess moisture in the bread.
