Orange Blender Cake Recipe

Ingredients:

  • 1 of vanilla extract
  • 1 of vinegar
  • 1 1/4 cups (250g/8.8oz) of granulated sugar
  • 1/2 cup (120ml) of vegetable oil
  • 50ml of freshly squeezed orange juice
  • 2 tbsp of orange zest
  • 2 1/4 cups (300g/10.5oz) of all-purpose flour
  • 2 of cornstarch
  • 2 tsp of baking powder
  • 1/2 tsp of salt

Directions:

  1. Preheat the oven to 350°F (180°C) and grease a 9-inch cake pan.
  2. In a blender, mix the eggs, vanilla extract, vinegar, and sugar until well combined.
  3. Add the oil, orange juice, and orange zest, blend until smooth.
  4. In a separate bowl, sift together the flour, cornstarch, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients in the blender and mix until just combined.
  6. Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
    Tips:
  • You can glaze the cake with a simple orange glaze made with powdered sugar and orange juice for extra sweetness.
  • Feel free to add a handful of chopped nuts or chocolate chips to the batter for added texture and flavor.
