This orange cake in a blender is a lazy cake for those who want to make a quick and easy cake.

Ingredients:

  • 3 eggs
  • 1 spoonful of vanilla extract
  • 1 spoonful of vinegar
  • 1 1/4 cups (250 grams/8.8 oz) of granulated sugar
  • 1/2 cup (120 ml) of vegetable oil
  • 50 ml of fresh orange juice
  • Zest of 2 large oranges
  • 2 1/4 cups (300 grams/10.5 oz) of all-purpose flour
  • 2 spoonfuls of cornstarch
  • 2 tsp of baking powder
  • 1/2 tsp of salt

Directions:

  1. Preheat your oven to 350°F (180°C) and grease a 9-inch round cake pan.
  2. In a blender, mix the eggs, vanilla extract, vinegar, and sugar until well combined.
  3. Slowly add the oil while blending until smooth.
  4. Add the orange juice and orange zest, blend for a few more seconds.
  5. In a separate bowl, whisk together the flour, cornstarch, baking powder, and salt.
  6. Slowly add the dry ingredients to the blender and mix until just combined.
  7. Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Tips:

  • Make sure not to overmix the batter once the dry ingredients are added to the blender.
  • You can add a simple glaze or dust the cake with powdered sugar before serving for an extra touch of sweetness.
