Ingredients
- 200 ml (3/4 cup) freshly squeezed orange juice
- Zest of 1 large lemon (about 1 tbsp)
- 1/2 tsp pure vanilla extract
- 120 ml (1/2 cup) neutral-flavored oil (vegetable, canola, or light olive oil)
- 1 tbsp white vinegar
- 250g (2 cups) all-purpose flour
- 150g (3/4 cup) granulated sugar
- 1 tsp baking soda
- 1/2 tsp salt
Directions:
- Preheat your oven to 180°C (350°F) and grease a 9×5-inch loaf pan.
- In a large mixing bowl, combine the orange juice, lemon zest, vanilla extract, oil, and white vinegar.
- In a separate bowl, whisk together the flour, sugar, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
- Pour the batter into the prepared loaf pan and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Tips:
- For an extra citrusy kick, you can add some additional lemon zest to the batter.
- Serve slices of this delicious eggless, milk-free, and yogurt-free cake with a dollop of coconut whipped cream or a dusting of powdered sugar.
