4 Light Summer Salads

Light and refreshing summer salad ideas perfect for hot days. With fresh ingredients such as seasonal fruits and vegetables, nuts and herbs, you can prepare a healthy and delicious meal for lunch or dinner.

1 – Greek Salad

Ingredients

2 diced tomatoes
1 cucumber, sliced
1/2 yellow bell pepper cut in pieces
1/2 red onion, chopped
80 g pitted black olives
1 tablespoon of olive oil
100 g of feta cheese
salt and pepper

Preparation

Put all the ingredients in a salad bowl, mix and chill.

2 – Shrimp and melon salad

Ingredients

150 g of salad
120 g pre-cooked and peeled shrimps 100 g pre-cooked chickpeas
1 stalk of celery in small pieces
2 slices of melon, diced
juice and zest of 1 lemon
1 tablespoon of olive oil
salt and pepper

Preparation

Put all the ingredients in a salad bowl, mix and chill.

3 – Tuna salad

Ingredients

80 g young lettuce shoots
12 cherry tomatoes
60 g mozzarella cheese in small balls
120 g tuna in plain
1 tablespoon of olive oil
salt and pepper

Preparation

Put all the ingredients in a salad bowl, mix and chill.

4 – Caesar salad

Ingredients

150 g of lettuce
150 g baked chicken breast
1 slice of toasted bread
20 g Parmesan cheese
For the sauce
1 jar of 0% white yogurt
chives
2 tablespoons of lemon juice

Preparation

Put the lettuce, the chicken in pieces, the toasted bread in cubes and the parmesan in a salad bowl.
Prepare the sauce by mixing the yogurt with the chives, lemon juice, salt and pepper and pour over the salad.
