Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsweetened almond milk
- 1/4 cup melted coconut oil
- 2 large eggs
- 2 tablespoons fresh lemon juice
- Zest of 1 lemon
- 1 teaspoon dried lavender buds
Directions:
- Preheat your oven to 350°F (180°C) and grease a donut pan with coconut oil.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the almond milk, melted coconut oil, eggs, lemon juice, and lemon zest.
- Slowly pour the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to overmix.
- Gently fold in the dried lavender buds.
- Transfer the batter to a piping bag or a ziplock bag with the corner snipped off.
- Pipe the batter into the donut pan, filling each cavity about 3/4 full.
- Bake for 10-12 minutes, or until the donuts spring back when lightly touched.
- Allow the donuts to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

- Make sure not to overmix the batter to avoid dense donuts.
