Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened almond milk
  • 1/4 cup melted coconut oil
  • 2 large eggs
  • 2 tablespoons fresh lemon juice
  • Zest of 1 lemon
  • 1 teaspoon dried lavender buds

Directions:

  1. Preheat your oven to 350°F (180°C) and grease a donut pan with coconut oil.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the almond milk, melted coconut oil, eggs, lemon juice, and lemon zest.
  4. Slowly pour the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to overmix.
  5. Gently fold in the dried lavender buds.
  6. Transfer the batter to a piping bag or a ziplock bag with the corner snipped off.
  7. Pipe the batter into the donut pan, filling each cavity about 3/4 full.
  8. Bake for 10-12 minutes, or until the donuts spring back when lightly touched.
  9. Allow the donuts to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
