Ingredients:

  • 2 cups almond flour
  • 1/3 cup erythritol
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3 large eggs
  • 1/4 cup melted butter
  • 1/3 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 1/2 cup fresh blueberries

Directions:

  1. Preheat your oven to 350°F (175°C) and grease a donut pan.
  2. In a large mixing bowl, whisk together the almond flour, erythritol, baking powder, and salt.
  3. Add in the eggs, melted butter, almond milk, and vanilla extract. Mix until well combined.
  4. Gently fold in the fresh blueberries.
  5. Spoon the batter into the donut pan, filling each mold about 3/4 full.
  6. Bake in the preheated oven for 18-20 minutes, or until the donuts are set and lightly golden brown.
  7. Allow the donuts to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
    Tips:
  • Be sure not to overmix the batter, as this can result in a dense texture.
  • You can sprinkle some extra erythritol on top of the donuts for added sweetness.
