Italian Sausage Potato Soup with Carrots & Spinach
Ingredients:
- 1 lb beef sausage, crumbled
- 4 medium potatoes, peeled and diced (about 2 cups)
- 2 carrots, peeled and sliced
- 2 cups fresh spinach, chopped
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- Salt and pepper to taste
Directions:
- In a large pot, cook the crumbled beef sausage over medium heat until browned.
- Add the chopped onion and minced garlic, cooking until fragrant.
