Italian lemon cake recipe

Ingredients:

  • 1 lemon (zest and juice)
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup sugar
  • 1/3 cup vegetable oil
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 2 eggs

Directions:

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a mixing bowl, combine the flour, baking powder, and salt. Set aside.
  3. In a separate bowl, whisk together the sugar, vegetable oil, milk, vanilla extract, lemon zest, and lemon juice.
  4. Gradually mix the wet ingredients into the dry ingredients until well combined.
  5. Beat in the eggs one at a time until the batter is smooth.
  6. Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
