Ingredients:
- 1 lemon (zest and juice)
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup sugar
- 1/3 cup vegetable oil
- 1/2 cup milk
- 1 tsp vanilla extract
- 2 eggs
Directions:
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a mixing bowl, combine the flour, baking powder, and salt. Set aside.
- In a separate bowl, whisk together the sugar, vegetable oil, milk, vanilla extract, lemon zest, and lemon juice.
- Gradually mix the wet ingredients into the dry ingredients until well combined.
- Beat in the eggs one at a time until the batter is smooth.
- Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
