Homemade Pineapple Quick Bread!

Ingredients:
2 cups all-purpose flour
1 cup sugar
1 tsp baking soda
1/2 tsp salt
1/2 cup vegetable oil
2 eggs
1 tsp vanilla extract
1 can (20 oz) crushed pineapple, undrained
1/2 cup chopped walnuts

Directions:

  1. Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, combine the flour, sugar, baking soda, and salt.
  3. In a separate bowl, mix together the oil, eggs, and vanilla extract.
  4. Stir the wet ingredients into the dry ingredients until just combined.
  5. Fold in the crushed pineapple, including the juice, and chopped walnuts.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes before removing to a wire rack to cool completely.
    Tips:
  • For extra flavor, you can add a teaspoon of cinnamon or nutmeg to the batter.
  • If you prefer a sweeter bread, you can add an additional 1/4 cup of sugar.
  • Make sure not to overmix the batter, as this can result in a tough bread.
