Healthy Fluffy Pancakes for Breakfast
Ingredients:
1 cup whole wheat flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon honey or maple syrup
1 cup buttermilk or almond milk
1 large egg
2 tablespoons coconut oil or olive oil, melted
1 teaspoon vanilla extract
Directions:
In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, and salt. In another bowl, combine the buttermilk, egg, melted coconut oil, vanilla extract, and honey. Pour the wet ingredients into the dry ingredients and stir gently until just combined, being careful not to overmix. Heat a non-stick skillet or griddle over medium heat and lightly grease it. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook for 2-3 minutes, or until bubbles form on the surface and the edges look set, then flip and cook for another 2 minutes until golden brown and fluffy. Serve warm with fresh fruits, yogurt, or a drizzle of honey.
