They are so easy to prepare, healthy and suitable on the go breakfast or a nice afternoon snack.
INGREDIENTS:
1 cup oatmeal flour (I grounded steel cut oats using the food processor)
Flax egg (tbsp grounded flax seeds+2 tbsp water or plant milk)
1 tbsp peanut butter
1 cup any plant milk (i used oats milk)
1/4 cup maple syrup or any other natural sweetener
2 mashed bananas
Chocolate chips
1 tsp baking soda
A pinch of salt
1/4 tsp cinnamon
1/4 tsp Vanilla powder
METHOD:
- In a large bowl, prepare the flax egg by adding one tbsp grounded flax seeds+ 2 tbsp water/ plant milk and let them for 2 minutes or until the water absorbed, making like a sticky texture.
- Add the mashed banana, peanut butter, maple syrup, salt, cinnamon and vanilla and mix them good
- Add oats flour, the baking soda and stir until combined, do not over mix. Fold in the chocolate chips.
- Scoop batter evenly into prepared muffin tin. Bake in preheated oven 180C for around 20-30 minutes or until set and the tops are slightly brown.
