Cracked biscuits: the recipe for soft sweets that are easy to prepare
Cracked biscuits are really delicious soft biscuits : preparing them is very easy and you can enjoy them for breakfast or as a snack, accompanied by a cup of hot tea or coffee. The name “crepati” refers to the way in which the icing sugar forms cracks in the biscuits while they are cooking in the oven, showing the inside: the result is soft biscuits inside and fragrant outside , but which do not crumble like normal biscuits cookies. In our recipe we have added cocoa powder , thus making delicious cracked chocolate biscuits orchocolate crinkles cookies , but you can flavor them however you like. Here are the steps to make them perfect.

How to prepare cracked chocolate biscuits
Step 1
In a bowl combine the flour, salt and baking powder1.
Step 2
In another bowl, beat the eggs with the sugar, melted butter and vanillin2.
Step 3
Incorporate the instant coffee and cocoa powder3.
Step 4
Add the dry ingredients and mix until you have a thick, smooth dough4. Put in the fridge for 4 hours.
Step 5
Make balls from the dough and roll them in icing sugar5.
Step 6
Bake them in a static oven at 180°C for 10 minutes6.

Cracked cookies are ready to be enjoyed7.
Advice
As soon as they are ready, wait a few minutes before transferring them to the wire rack : after cooking they are in fact very delicate and could break.
Those who prefer can also add 100 g of chopped almonds or hazelnuts to the dough .
Variants
Instead of cocoa, you can also use dark chocolate . In this case, melt 200 g of dark chocolate in a double boiler or in the microwave oven together with 50 g of butter. In a bowl mix 100 g of sugar with 2 eggs, then add 200 g of flour, the vanillin, 1/2 sachet of baking powder and a pinch of salt, add the melted chocolate and mix. Let the dough rest in the fridge for half an hour covered with transparent film and then proceed to make the cracked chocolate biscuits as per the recipe.
You can also flavor your cracked biscuits with lemon , adding lemon zest and juice to the dough, or make delicious cracked biscuits with alchermes , the particular liqueur which will give your biscuits their characteristic pink colour: add 1 small glass of it to the dough of sugar, butter, eggs, flour and baking powder. instead of cocoa.

You can keep cracked cookies for 4-5 days in a tin box or in an airtight container.
