Chicken and Zucchini Fritters: The Tasty Low Carb Appetizer Recipe

Store chicken and zucchini fritters in the refrigerator for up to 3 days. Store in an airtight container lined with paper towels to absorb excess moisture.

Ingredients

zucchini: 200g
chopped chicken breast: 300g
parmesan cheese: 50g (1/2 cup)
ham: 100g
garlic: 1 clove
egg: 1
pepper
salt
breadcrumbs: 30 g (1/4 cup)
frying oil

Instructions

Grate the zucchini and squeeze out excess moisture with your hands.
Add chopped chicken breast, parmesan, ham, garlic, egg, salt and pepper to a large bowl.
Add bread crumbs.
Mix until all ingredients are completely combined.
Scoop out the mixture with a spoon and use your hands to create a doughnut shape. Coat the chicken zucchini fritters with more breadcrumbs.
Pour a little extra virgin olive into a non-stick pan over medium-low heat. Place the chicken fritters in the pan and cook for about 10 minutes on each side.
Cook until golden brown and cooked through.
To avoid grease, drain the chicken and zucchini fritters on a paper towel-lined plate. Serve and enjoy!
