FIT CAKE / OMLET WITH COCOA CREAM LIKE KINDER MILK SANDWICH
INGREDIENTS:
(18cm)
2 OMLET:
wholemeal or buckwheat flour – 4 tablespoons (you can replace it with any other, but not coconut and corn, as they are too “loose”)
bitter cocoa – 2 tablespoons
large egg proteins – 4 pcs
skimmed milk – 4-5 tablespoons
baking powder – 1 teaspoon
sweetener – xylitol, erythritol, sweetener – to taste
FOAM CREAM:
low-fat yogurt rich in protein – 150 g
lean cottage cheese – 100 g
sweetener – xylitol, erythritol, sweetener – to taste
gelatin – 1 teaspoon
ADDITIONALLY:
dates (pre-soaked)
THE PREPARATION METHOD:
2 OMLET:
Beat the egg whites until stiff with a little salt, add the sifted flour with the cocoa, baking powder and sweetener.
Mix everything, brown 2 same omelettes in a lightly greased non-stick pan, leave to cool.
FOAM CREAM:
Pour the gelatin with a little hot water, mix well.
We mix low-fat cottage cheese with yogurt and sweetener until smooth, add dissolved gelatin (harden it beforehand so that there are no lumps).
Pour into an 18cm cake tin lined with baking paper at the bottom. We let it solidify.
CARAMEL:
Blend the soaked dates into a very creamy cream, which is easy when the dates are soaked beforehand.
TOGETHER:
At the bottom of the springform mold, place the omelette (you can, if you want, lightly soak it with milk).
Top with date caramel.
We put the concentrated cream mousse.
Cover with the second buttered omelette. We press.
