This buffalo chicken salad is packed with fresh vegetables, feta cheese, and the perfect buffalo chicken. Layer this with some homemade dressing, and you’ll have your new go-to salad recipe!
INGREDIENTS :
Buffalo Chicken:
1 pound Boneless Skinless Chicken Breasts (cut thin or pounded thinner)
2 teaspoons Ranch Powder Seasoning
1/3 cup Frank’s Hot Sauce
3 tablespoons Honey
Salad:
4 cups Romaine Lettuce, chopped
1/2 cup Grape Tomatoes, halved
1/2 cup Carrots, shredded
1/2 cup Feta Cheese, crumbled
1/2 cup Celery, diced
Ranch Dressing or blue cheese dressing
INSTRUCTIONS :
Buffalo Chicken:
1.Prepare your marinade by combining the buffalo sauce, ranch seasoning, and honey. Whisk until combined.
2.Place the prepared chicken in a sealable plastic bag, add the marinade, and move the bag around to coat the chicken. Allow it to marinate for 25 minutes or a few hours.
3.Grill, pan-fry, or bake the chicken until the juices run clear.
4.I like to add extra buffalo sauce on top to give it an extra bold flavor!
Salad:
1.To assemble your salads, divide the salad ingredients evenly between 2 bowls, or make one large salad to share!
2.Slice the chicken and add to the salad.
3.Top with ranch dressing or blue cheese dressing. Enjoy!
