Fluffy Sour Milk Pancakes
Ingredients:
- 1 cup sour milk
- 1 egg
- 2 tablespoons sugar
- 1 tablespoon melted butter
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Directions:
- In a medium-sized mixing bowl, start by combining the sour milk and egg. Whisk them together until the mixture is smooth and well-blended.
- Gradually add the sugar and melted butter to the wet mixture, ensuring to stir continuously until all elements are fully incorporated.
- In a separate large bowl, sift together the dry ingredients: all-purpose flour, baking powder, baking soda, and salt. This step helps to eliminate lumps and ensures an even texture in your pancakes.
- Make a well in the center of the dry ingredients and pour in the wet mixture. Using a spatula or a wooden spoon, gently fold the wet ingredients into the dry ones. Be careful not to overmix; a few lumps in the batter are perfectly fine and will help keep the pancakes fluffy.
- Preheat a non-stick skillet or griddle over medium heat. Lightly grease it with some butter or cooking spray.
- Pour approximately 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles begin to appear and the edges seem set, about 2-3 minutes.
- Flip the pancakes over and cook the other side until golden brown, another 2 minutes. Adjust the heat if necessary to ensure even cooking.
- Serve the pancakes warm with your choice of toppings such as maple syrup, fresh fruits, or a dollop of whipped cream.
Tips:
- If you do not have sour milk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk and letting it sit for 5-10 minutes.
- For extra flavor, consider adding a teaspoon of vanilla extract to the wet ingredients.
- Keep cooked pancakes warm on a baking sheet in a 200°F oven while you finish cooking the remaining batter.
