Lime Mousse Cheesecake

Ingredients:

  • 1 1/2 cups of finely crushed graham crackers
  • 1/4 cup of melted butter
  • 2 tablespoons of sugar
  • 1 package of cream cheese, softened
  • 1/2 cup of powdered sugar
  • 1 teaspoon of vanilla extract
  • 1 cup of heavy cream
  • Zest of 2 limes
  • Juice of 3 limes
  • 1/4 cup of granulated sugar
  • 1 envelope of unflavored gelatin
  • Lime slices and whipped cream for garnish

Directions:

  1. In a bowl, mix together the graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a springform pan to create the crust. Chill in the refrigerator while preparing the filling.
  2. In a large bowl, beat the cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
  4. In a small saucepan, combine the lime zest, lime juice, and granulated sugar. Cook over low heat until the sugar is dissolved. Remove from heat and sprinkle the gelatin over the mixture, stirring until completely dissolved.
  5. Gradually stir the lime mixture into the cream cheese mixture until well combined. Pour the filling over the crust in the springform pan.
  6. Chill the cheesecake in the refrigerator for at least 4 hours, or until set.
  7. Once chilled, remove the cheesecake from the pan and garnish with lime slices and whipped cream before serving.
    Tips:
  • Make sure to zest the limes before juicing them for maximum flavor.
  • For a more intense lime flavor, add a few drops of lime extract to the filling mixture.
  • You can also add a splash of tequila to the lime mixture for a fun twist on this dessert.
