Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened coconut flakes
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup coconut milk
  • 1/4 cup melted butter
  • 1 large egg
  • 1 teaspoon vanilla extract

Directions:

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, salt, and coconut flakes.
  3. In a separate bowl, mix together the crushed pineapple, coconut milk, melted butter, egg, and vanilla extract.
  4. Gently fold the wet ingredients into the dry ingredients until just combined. Be careful not to overmix.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
