Simple Chocolate Cake Recipe
This simple chocolate cake is for everyone to make, it has two layers of soft and moist chocolate cake that is filled and frosted with chocolate frosting.
Ingredients:
- 2 cups (400 grams) of granulated white sugar
- 1 3/4 cups (245 grams) of all-purpose flour
- 3/4 cup (75 grams) of unsweetened cocoa powder (natural or Dutch-processed)
- 1 1/2 teaspoons of baking powder
- 1 1/2 teaspoons of baking soda
- 1/2 teaspoon of salt
- 2 large eggs
- 1 cup (240 ml) of warm water or coffee
- 1 cup (240 ml) of milk
- 1/2 cup (120 ml) of corn, vegetable, safflower, or canola oil
- 1 1/2 teaspoons of pure vanilla extract
Chocolate Frosting: - 6 ounces (180 grams) of semi-sweet or bittersweet chocolate, coarsely chopped
- 1 cup (226 grams) of unsalted butter, at room temperature
- 2 cups (230 grams) of confectioners (powdered or icing) sugar, sifted
Directions:
- Preheat your oven to 350°F (180°C) and grease and flour two 9-inch round cake pans.
- In a large mixing bowl, combine the sugar, flour, cocoa powder, baking powder, baking soda, and salt. Add the eggs, warm water or coffee, milk, oil, and vanilla extract, and mix until well combined.
- Divide the batter evenly between the prepared cake pans and bake for about 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then remove from the pans and cool completely on a wire rack.
Chocolate Frosting: - Melt the chocolate in a heatproof bowl set over a pot of simmering water, stirring occasionally until smooth. Let it cool to room temperature.
- In a separate bowl, cream the butter until smooth and creamy. Gradually add in the powdered sugar and beat until well combined.
- Mix in the cooled melted chocolate until smooth and creamy.
Assembly: - Place one cake layer on a serving platter and spread a layer of frosting on top. Place the second cake layer on top and cover the entire cake with the remaining frosting.
- Decorate as desired and enjoy!
Tips:
- For a richer flavor, use Dutch-processed cocoa powder.
- Make sure all your ingredients are at room temperature for a smoother batter.
- You can add a pinch of espresso powder to enhance the chocolate flavor.
- To make it extra decadent, sprinkle some chocolate shavings on top of the cake before serving.
