Homemade Pineapple Quick Bread!
Ingredients:
2 cups all-purpose flour
1 cup sugar
1 tsp baking soda
1/2 tsp salt
1/2 cup vegetable oil
2 eggs
1 tsp vanilla extract
1 can (20 oz) crushed pineapple, undrained
1/2 cup chopped walnuts
Directions:
- Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a large bowl, combine the flour, sugar, baking soda, and salt.
- In a separate bowl, mix together the oil, eggs, and vanilla extract.
- Stir the wet ingredients into the dry ingredients until just combined.
- Fold in the crushed pineapple, including the juice, and chopped walnuts.
- Pour the batter into the prepared loaf pan.
- Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before removing to a wire rack to cool completely.
Tips:
- For extra flavor, you can add a teaspoon of cinnamon or nutmeg to the batter.
- If you prefer a sweeter bread, you can add an additional 1/4 cup of sugar.
- Make sure not to overmix the batter, as this can result in a tough bread.
