Fluffy Mini Pancakes
Ingredients:
- 250ml of milk
- 1 egg
- 1.5 tablespoons of sugar
- 1/2 teaspoon of salt
- 1 cup of all-purpose flour
- 1 teaspoon of baking powder
- 1/2 teaspoon of vanilla extract
- Butter or oil for cooking
Directions:
- In a mixing bowl, beat the egg and then stir in the milk, sugar, and salt until well combined.
- Sift in the flour and baking powder, then stir until the batter is smooth. Add in the vanilla extract and mix well.
- Heat a non-stick pan over medium heat and add a small amount of butter or oil.
- Pour small amounts of batter onto the pan to form mini pancakes. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
- Repeat with the remaining batter, adding more butter or oil to the pan as needed.
- Serve the fluffy mini pancakes warm with your favorite toppings such as maple syrup, fresh fruits, or whipped cream.

- Make sure not to overmix the batter to ensure fluffy pancakes.
- You can add chocolate chips, blueberries, or bananas to the batter for extra flavor.
- Keep the cooked pancakes warm in a low oven while you finish cooking the remaining batter.
