Ingredients:

  • 3 large eggs
  • Salt and black pepper to taste
  • 1 tablespoon of sour cream
  • Handful of chives, finely chopped
  • Beef sausage or other fatty sausage, sliced
  • 1 large potato, peeled and grated
  • Oil for greasing

Directions:

  1. In a bowl, whisk together the eggs, salt, black pepper, and sour cream until well combined. Stir in the chopped chives.
  2. Heat a skillet over medium heat and cook the sliced beef sausage until browned and crispy. Remove from the skillet and set aside.
  3. In the same skillet, add a bit of oil if needed and add the grated potato. Cook for about 5-7 minutes, stirring occasionally, until the potatoes are crispy.
  4. Pour the egg mixture over the crispy potatoes and cook until the eggs are set, about 3-4 minutes.
  5. Serve the breakfast hash topped with the cooked beef sausage.
    Tips:
  • Feel free to customize this breakfast hash with your favorite veggies or meats!
  • For a vegetarian version, simply omit the sausage and add more veggies like bell peppers and mushrooms.
  • Don’t overcrowd the skillet when cooking the potatoes to ensure they get crispy.
