Rich Banana Bread
Ingredients:
- 1/2 cup of unsalted butter, melted
- 1 cup of granulated sugar
- 1 teaspoon of vanilla extract
- 2 large ripe bananas, mashed
- 2 eggs, beaten
- 1 1/2 cups of all-purpose flour
- 1 teaspoon of baking soda
- 1/2 teaspoon of salt
- 1/2 cup of plain Greek yogurt
- Optional mix-ins: chocolate chips, chopped nuts, or dried fruit
Directions:
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a large mixing bowl, combine the melted butter and sugar. Stir in the vanilla extract, mashed bananas, and beaten eggs.
- Gently fold in the flour, baking soda, and salt until just combined. Be careful not to overmix.
- Stir in the Greek yogurt until the batter is smooth. If desired, fold in any optional mix-ins at this point.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the banana bread to cool in the pan for 10 minutes before removing it to a wire rack to cool completely.
- Slice and enjoy with a spread of butter or a drizzle of honey!
Tips:
- For extra moist banana bread, use overripe bananas with lots of brown spots.
- Make sure not to overmix the batter, as this can result in a tough bread.
- Store leftover banana bread in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
