Ingredients
For the Dough:

  • 1 egg
  • Zest of 1 lemon
  • 125 grams (1/2 cup) of sugar
  • 310 grams (2 1/2 cups) of flour
  • 5 grams (1 teaspoon) of baking powder
  • 140 grams (5 oz) of butter, softened

Directions:

  1. Preheat the oven to 180°C (350°F) and grease a cake pan.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add in the egg and lemon zest, mixing well.
  4. Gradually add in the flour and baking powder, mixing until a dough forms.
  5. Press the dough into the prepared cake pan, smoothing out the top.
  6. Bake in the preheated oven for about 25-30 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool before slicing and serving.
    Tips:
  • For an extra burst of citrus flavor, you can add a splash of lemon juice to the dough.
  • This cake is perfect for serving with a dollop of whipped cream or a scoop of vanilla ice cream.
