Luscious Lemon Cream Roll Cake with Lemon Glaze
Ingredients:
4 large eggs
1 cup granulated sugar
1 cup all-purpose flour
1/4 teaspoon salt
1/2 teaspoon baking powder
1/2 cup lemon juice (freshly squeezed)
1/4 cup unsalted butter (melted)
1 teaspoon vanilla extract
Powdered sugar (for dusting)

Instructions:
- Preheat your oven to 350°F (175°C). Prepare a jelly roll pan (about 15×10 inches) by lining it with parchment paper and lightly greasing it.
- In a large mixing bowl, beat the 4 eggs using an electric mixer on high speed until they are thick and pale, about 5 minutes. Gradually add in the 1 cup granulated sugar, continuing to beat until fully combined and fluffy.
- In another bowl, whisk together the 1 cup all-purpose flour, 1/4 teaspoon salt, and 1/2 teaspoon baking powder. Slowly fold this dry mixture into the egg mixture until just combined. Be gentle to retain the airiness!

- Meanwhile, prepare the lemon glaze by mixing 1 cup powdered sugar with 2 tablespoons of lemon juice until smooth and pourable.
- Unroll the cooled cake carefully. Spread a layer of lemon cream or lemon curd across the surface, then roll the cake back up without the towel.
- Place the cake seam-side down on a serving platter. Drizzle the lemon glaze over the top, and garnish with lemon zest for a pop of color and flavor.
