Keto Blueberry Donuts – Low-Carb Sweet Bliss!
Ingredients:
- 2 cups almond flour
- 1/3 cup erythritol
- 1 tsp baking powder
- 1/4 tsp salt
- 3 large eggs
- 1/4 cup melted butter
- 1/3 cup unsweetened almond milk
- 1 tsp vanilla extract
- 1/2 cup fresh blueberries
Directions:
- Preheat your oven to 350°F (175°C) and grease a donut pan.
- In a large mixing bowl, whisk together the almond flour, erythritol, baking powder, and salt.
- Add in the eggs, melted butter, almond milk, and vanilla extract. Mix until well combined.
- Gently fold in the fresh blueberries.
- Spoon the batter into the donut pan, filling each mold about 3/4 full.
- Bake in the preheated oven for 18-20 minutes, or until the donuts are set and lightly golden brown.
- Allow the donuts to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Tips:
- Be sure not to overmix the batter, as this can result in a dense texture.
- You can sprinkle some extra erythritol on top of the donuts for added sweetness.
