MINI BANANA BREAD MUFFINS!
Ingredients:
- 1 cup of granulated sugar
- 1/2 cup of unsalted butter, melted
- 2 large eggs
- 3 very ripe bananas, mashed
- 1 tablespoon of fresh lemon juice
- 2 cups of all-purpose flour
- 3 teaspoons of baking powder
- 1/2 teaspoon of salt
- Mini chocolate chips for topping
Directions:
- Preheat the oven to 350°F (175°C) and line a mini muffin tin with liners.
- In a mixing bowl, cream together the sugar and melted butter.
- Add in the eggs one at a time, mixing well after each addition.
- Stir in the mashed bananas and lemon juice.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Scoop the batter into the prepared muffin tin, filling each cup 3/4 full.
- Sprinkle mini chocolate chips on top of each muffin.
- Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Tips:
- Make sure your bananas are very ripe for the best flavor in these muffins.
- Feel free to add chopped nuts or dried fruit to the batter for extra texture and flavor.
- Store any leftovers in an airtight container at room temperature for up to 3 days, or in the freezer for longer storage.
