No eggs, No milk, No yogurt!! You will be amazed by the result! Super soft and delicious!

Ingredients

  • 200 ml (3/4 cup) freshly squeezed orange juice
  • Zest of 1 large lemon (about 1 tbsp)
  • 1/2 tsp pure vanilla extract
  • 120 ml (1/2 cup) neutral-flavored oil (vegetable, canola, or light olive oil)
  • 1 tbsp white vinegar
  • 250g (2 cups) all-purpose flour
  • 150g (3/4 cup) granulated sugar
  • 1 tsp baking soda
  • 1/2 tsp salt

Directions:

  1. Preheat your oven to 180°C (350°F) and grease a 9×5-inch loaf pan.
  2. In a large mixing bowl, combine the orange juice, lemon zest, vanilla extract, oil, and white vinegar.
  3. In a separate bowl, whisk together the flour, sugar, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
  5. Pour the batter into the prepared loaf pan and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
    Tips:
  • For an extra citrusy kick, you can add some additional lemon zest to the batter.
  • Serve slices of this delicious eggless, milk-free, and yogurt-free cake with a dollop of coconut whipped cream or a dusting of powdered sugar.
