Lemon Blueberry Swirl Bread
Ingredients:
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1/2 cup milk
1/4 cup fresh lemon juice
1 tablespoon lemon zest
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup fresh blueberries
Directions:
- Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a large bowl, cream together the butter and sugar until light and fluffy. Add in the eggs, milk, lemon juice, and lemon zest until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Gently fold in the blueberries until evenly distributed.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Tips:
- For a more intense lemon flavor, you can add a few drops of lemon extract to the batter.
- Dust the blueberries with a little flour before adding them to the batter to prevent them from sinking to the bottom of the bread.
