A simple fruit cake – a cake with nuts and dried fruits
Ingredients:
250 g of wheat flour
180 g of cukru
5 eggs
250g butter
a small pinch of salt
0.5 teaspoon baking soda
1 tablespoon of milk
about 300 g mixed nuts and dried fruit (prepared or freely composed)
the zest of 1 lemon or 1 orange
to decorate: chocolate topping or icing
Preparation :
Preheat the oven to 180 degrees (top and bottom heating, no convection).
Cut the nuts into small pieces (not too small!). Mix with two tablespoons of flour and set aside.
Mix soda with milk.
Separate whites from yellows.
Cream the butter with the sugar until light and fluffy. Add the egg yolks one by one while mixing (mix for at least 1 minute after each addition).
Gradually add the sifted flour to the mass as well as the finely grated lemon or orange zest (the fruit must first be boiled). Mix with a blender only until ingredients are combined (lowest speed).
Beat the egg whites with a pinch of salt until stiff. Add them to the rest of the ingredients and mix gently with a spoon or spatula.
At the end, gently mix the soda with the milk and the floured nuts and dried fruits.
Put the dough in a mold – preferably fruit cakes (this time I used a Stella mold) Attention! Regardless of the mold used, the dough should not exceed 3/4 of its height.
Bake the cake in the preheated oven for approximately 60 minutes. dry stick. Cooking time may vary depending on oven.
Advice! Halfway through baking, you can cut the cake lengthwise to a depth of about 1 cm to prevent the cake from cracking unevenly.
After baking, the cake can be decorated with icing or chocolate icing. If the edges of the cake are overcooked (this was my case, because I baked several pastries at once, just cut them thinly and decorate only the baking).
