Ingredients: half an avocado at room temperature, an egg, 2 fingers of sunflower oil, 2 tablespoons of lemon juice, black pepper, 2 sprigs of fresh coriander, a pinch of salt.

Place the room temperature egg, oil and salt in the blender at maximum power. The result will have a very thick, almost foamy consistency, very similar to classic mayonnaise.

Add the lemon juice, the half avocado cut into pieces, the coriander leaves and a pinch of black pepper, and continue blending for a few seconds. It is very important to store avocado mayonnaise in an airtight jar. Store in the fridge for up to 3-4 days.
